Bay Valley Foods, LLC is recalling approximately 188,181 pounds of Reduced Sodium Chicken Noodle Soup because it may contain an undeclared allergen. The product label indicates that the can contains Chicken Noodle Soup; however, it may contain Cream of Chicken Soup. The product was prepared using an ingredient blend that contained milk, a known allergen, which was not declared on the label

My dear husband got an iPad for me - thank you, thank you, thank you :))) - and it has a camara. Yay - so now I can finally take a picture and upload it right away to the blog. No longer do I have to first go downstairs, download the pictures, and then upload them...now it's one super easy, easy step. Whoo-hoo how exciting is that?! Well, at least to me it is. And why do I take pictures of food? - When Alena was little one of the biggest questions I had was what do kids with Galactosemia eat? There was so much conflicting information and I was so scared. I honestly had no idea and honestly, I was not interested in all the negativity and only reading what she cannot eat. I wanted to know what she can eat, that the diet is manageable and that it will be OK. So hopefully someone will find the pictures encouraging,useful and gain confidence in the diet. Others may find it contraversioal but to me it is evidence that the diet is manageable, healthy, and no big deal.

It's Kids Night Out - we made pizza for the girls to take along. Peperoni, sausage, kalamata olives, and sauce (from Trader Joe's)


Kids Night Out - the first one this school year. Yes, I am not kidding :))) Both girls were so excited and we did make pizza again, just like we did last school year. Well, but I do have to admit that this time I bought the dough at New Seasons - I ran out of Olive Oil!!! - it still was fun. A jar of Trader Joe's Olive Oil, pepperoni, kalamata olives, and sausage. Sometimes we top the pizza with Parmeseano Regiano, Alena however told me "I do not like cheese on pizza". So it was a cheese less delicious pizza, and it was baked to perfection at school :)))

The Raymond-Hadley Corp. of Spencer, NY is recalling some varieties of Better Batter brand baking mixes, because they may contain the undeclared allergen Milk. People who have an allergy or severe sensitivity to milk run the risk of serious or life-threatening allergic reaction if they consume these products.

Elsie Grace's Dry Food Company of Frankfort, Kansas is issuing a recall of some dip mix and soup mix products because they may contain undeclared milk, soy, or wheat. People who have an allergy or severe sensitivity to milk, soy, or wheat run the risk of serious or life threatening allergic reaction if they consume these products.


Alena liked her breakfast this morning :)


Woohoo what a great start into this Wednesday morning. - It is not an everyday occurence that Alena finishes her entire breakfast. Quite offen it is more like "pulling teeth"....I am so happy when they eat so well in the morning to recharge their batteries. The school day is long and they only have about 15 minutes to eat, or otherwise there is no time to go to the playground....

The last of the Easter ham - Navy Bean & Ham Soup


Our Easter Ham was delicious this year, and large enough for three dinners - well, inclusive Easter. Last night it was fried ham "steak" with sweet potatoes and salad. Tonight I made the rest of it as a soup, with navy beans, sauteed onions and carrotts, and tomatoes. Served up with thick slices of crusty bread it was fantastic.

Alena loved it - she loves all beans and much perfers them over any type of meat, well sausage being the only exception ;)

What a Fun Easter we had

The Girls were so excited for Easter this Year. Alena woke up twice (!) to see if the Easter Bunny been to our house. So what were in the baskets this year? Junior Mints, Skittles, and Sunburst; a Lindt dark chocolate Bunny; a mood ring for each girl, charms, mini staplers and finally a couple of fun tiny erasers. Oh, how much fun it was to get everything ready for the baskets :)

Easter Dinner - Ham, galic mashed potatoes, asparagus and bunny biscuit.


I am so so proud of the bunny biscuits. Are they not cute?! This is the first time this Mama has made biscuits :) I used Earth Balance instead of Butter, and plain soy creamer instead of cream. They tasted delicious and looked pretty cute ;). - We served a salad with warm mushrooms along the bunnies for an appetizer. For the main meal we feasted on bunnies, ham, mashed potatoes, and roasted asparagus.

Lentil Soup with Chard, Leek, and little smoked links


We love lentils - yes, I did say lentils - all of us :) We eat them with SpƤtzle and Wieners, with Rice, with potatoes and pesto, as soup. I like to use dried green lentils but also keep a couple of cans in the pantry for quick meals.

Tonight was just such a day....just in case it looks good to you this is my creation

1 TB Olive Oil
1/2 Large onion chopped
1 leek sliced and washed
1 bunch of chard - washed, stems, and leaves separated. Chop stems and leaves - keep
  separate.
6 small pototoes, peeled and cut in cubes
1 - 32oz pack of chicken broth
1 can lentils drained
3/4 lb. Little smoked sausage links
Splash of Balsamic Vinegar - to taste
Salt and Pepper

1. Heat Olive Oil - add onions and a pinch of Salt. Sautee until soft
2. Add leeks and sautee untl soft
3. Add chopped chard stems - and sautee for another minute or so, stiring often
4. Add potatoes And stir for another minute
5. Add broth, lentils, and sausage links
6. Simmer until potatoes are soft
7. Add salt, pepper, and Balsamico to taste.

I served it with crusty rustic bread.

Oh, and the best part was that both kids loved it :)))

Hello again :)

How is everybody?  Well,  we are all doing good.  Me and Alena have adjusted very well to school.  It was a very hard first month and now...do I dare say it?  Yes, I will now I love it.  I have come a very long way.  The beginning was not hard because of Alena's dietary issues,  it was just hard to adjust to a new school.  We came from a small private setting were the teachers had an abundance of time for every child, two teachers in every single class room.  Alena's first grade teacher just has a very different style - and we love it. We do not need to worry one last second about her getting food that is not OK.  For one,  Alena always asks, and secondly we worked it out well with the nurse, teacher, and principal.

The principal actually called me over Labor Day weekend right before school started to assure us that we would not have to worry.  The plan was set and everyone went above and beyond to make sure that no mistakes will happen.  We put Cuties as well as pop-sickles in the "special" freezer in the teacher lounge with Alena's name on it.  Whenever there is a party her teacher goes to the freezer to get Alena her treat.  So now, of course I somehow feel like a fool for having had such worries...but I guess that is just what Mama's do :)

Should I come back?

lot's happened. School is good - super supportive - went to Europe and had two Bday parties. The next blood draw is coming up but besides that we just live a happy ordinary life :))).

Is anyone else stll out there and interested in what I have to say??? Or did you all give up on this Mams? ;)
