...and you Know what day Wednesday is? The day of the downtown Portland Farmer's Market and the day when we get the most wonderful mushrooms. So today's dinner was Mushroom Risotto made with Shitake mushrooms, and served along a beutiful Green salad with carrotts as well as fresh cucumber. And yes, I added Parmesiano Regiano at the end, and also served Parmesiano Regiano on the table. It was delicious and the entire family enjoyed today's dinner. - Yay!
