Swabian Mini Meatballs for #SundaySupper {Schwaebische Mini Fleischkuechle}

Did anyone say party? It is Tailgating Time and the football season is back. "Tailgating Time" is this weeks event by the Sunday Supper Movement.   Okay, so I admit that this German girl has never been Tailgating.  Yes, I have heard it before but was not sure.  Luckily Ron filled me. Plus I also resorted to another trusted source for research - yup, Wikipedia. Wikipedia informs that a "Tailgate Party" is a party that is held around the open tailgate of a vehicle.  These parties are usually held outdoors, or in parking lots. This is a perfect occasion to bring Swabian Mini Meatballs.  Where is Swabia you ask?  Well, it is in Southern Germany and part of Baden-Wurttemberg.  Tuttlingen, the town I grew up in is in Swabia.  So to me this is home cooking - well, okay my version of them....

Swabian Mini Meatballs {Schwaebische Mini Fleischkuechle}

1-3/4 lb. of ground beef {I like to use the leanest}
1/2 lb.    of ground pork
1/2 -3/4 C Matzo Meal {or if lactose is no issue any type of breadcrumb}
2-3 cloves of garlic finely minced, or pressed
1   small  onion finely diced
1   Tbs  dried parsley {or fresh, but use more}
3-4 tsp  paprika
1   Tbs  Kosher salt
             Black Pepper {I grind a lot of it on top}
1           egg

1.  Mix all the ingredients together until well blended.  You may have to increase the amount of Matzo
     Meal/breadcrumbs if the mixture is not firm enough.  Let the "dough" rest for at least 30 minutes,
     then,
2.  roll dough into individual meatballs about 1"
3.  {I use a cast iron pan and do not add oil} heat your pan, and add the first batch of meatballs. Be
     sure to not overcrowd the pan.  When one side is nice and brown, turn - keep repeating the turning
     until meatballs are browned on all sides. Then,
4. remove from pan and set on paper towel.  Repeat until all meatballs are nice and brown.

You can either enjoy them warm, or cold.  I like them without any condiments - yes, me who is usually crazy about condiments - but Ron likes them with mustard.  They are perfect finger food and a hit at any party!


Winning or losing, watching football is always better with a tailgate party. Hosting a big viewing party at home or setting up camp outside the stadium. These recipes are sure to get you in the mood for the big game.
