The weather in Portland has now turned that it is just so nice to stay inside, curl up with a book, and make a fire. The perfect time of year for stick-to-your-ribs kind of food :) I decided to make the Chicken & Mushroom Stew which I generally make a couple of time during the fall and winter season. It is so earthy with the mushrooms and perfect for this time of year. The other thing I really, really like about this recipe that the house just smells amazing - as it cooks in the oven for over an hour. While it is in the oven it is perfect {make sure there is nothing on the stove - and set the time to shut off the oven just in case} time to take a nice little walk. Get back indoors, and enjoy the delicious stew...
Chicken and Mushroom Stew
- 3 lbs. of chicken thigs {I like boneless skinless}
- fresh ground pepper, salt
- 6 large shallots, halved and cut into chungs
- Olive Oil
- 3/4 lb mushrooms {I mixed Porcini, Shitake, and few White Button} - cleaned and cut into pieces
- 1 bottle of dry white wine
- 1/4 C of Tofutti Sour Cream
- Chopped Italian Parsley {for garnish}
1. season chicken with fresh ground pepper, and salt - Preheat oven to 375 F
2. heat olive oil in cast iron pot and fry chicken until browned on each side {in batches}; when all the chicken is browned remove and set aside, then,
3. add a little more olive oil to the pot and sauté the shallots until they are soft, and fragrant; remove and set aside, then
4. add a little more olive oil and sauté mushrooms until they are browned and fragrant {takes about 5-10 minutes, then
5. return chicken, and shallots to the pot - add bottle of white wine and bring everything to a simmer; when it comes to a slow simmer, cover and
6. put the pot into the oven. Cook for about 90 minutes then remove pot from oven,
7. add Tofutti Sour Cream and stir it thoroughly into the stew {you can add more}, adjust salt, and
pepper and garnish with chopped fresh parsely.
Serve on a bed of egg noodles - Enjoy!
