Savory Baked Pinwheel's for #SundaySupper {#dairyfree & #vegan}

Football season is back and you know what that means?  It's Tailgate party season for many sport fans around the United States. I actually have never been to a Tailgate party but it sounds like a  fun way to get ready for a game.  Wikipedia describes a tailgate party as "...social event held around the tailgate of a vehicle..." it includes food as well as drinks and are usually held in the parking lot before the game.  The perfect theme for this week's #SundaySupper right?!  Thank you so much to Lane of Supper for a Steal hosting the annual #SundaySupper Tailgate Party again :).

Today I bring Savory Baked Pinwheel's it is the best title I could come up with.  In German these beauties are called Schnecken which translates to snails and I figured calling them Savory Baked Snails does not sound too appetizing, right?!



Savory Baked Pinwheels
Dough
  • 2-1/2 C flour
  • 2-1/4 tsp. yeast
  • 1 tsp. salt
  • 1-1/4 C warm water
  • 1 Tb Olive Oil
  1. Combine yeast with warm water in a large bowl. Gently combine both and let sit for a couple of minutes.
  2. Add Olive Oil, salt and mix together.
  3. Add the flour and combine all ingredients until a dough is formed {I like to make it by hand, but a mixer works as well}. 
  4. Knead dough until it is smooth. Place into a larger bowl, cover with plastic wrap and set aside in a warm spot and let the dough rise. It is done when it has doubled its size.
Filling
  • 2 lbs onion; thinly sliced
  • 3 garlic cloves minced
  • 1 large orange or red pepper thinly sliced
  • 3 celery stalks diced
  • 1 Tb Olive Oil
  • 1/2 C Daiya Mozzarella style "cheese" {or other white vegan cheese}
  • 2-3 tsp Dijon mustard
  • Salt, pepper, and paprika to taste
  1. Heat olive oil in a large pan until hot.
  2. Add all vegetables and sautee a medium heat until soft; do not let them brown.  When soft
  3. transfer to a bowl and combine with "cheese", Dijon mustard, salt, pepper, and paprika to taste. 
  4. Set aside until ready to assemble the pinwheels
Assembly & Finishing
*Preheat oven to 400F - line cookie sheet with parchment paper

  1. When dough has doubled - roll it out thinly; it should be about the size of a cookie sheet or larger.
  2. Smooth the filling onto the dough
  3. Gently roll up the dough - be very careful at this step
  4. Gently cut about 3/4" thick slices from the roll and place flat - pinwheel side up - immediately on the prepared cookie sheet. Continue until the entire roll has been cut.
  5. Place in preheated oven and bake for about 45 minutes; or until golden

Enjoy! - Serve as an appetizer, or main dish with a side salad, or side.

Emeril's Potluck Spiced Nuts & Prosciutto Breadsticks #SundaySupper


This week's them for our last #SundaySupper event of 2012 is New Year's Potluck with Emeril.  I am so excited to be part of the great event.  25 contributors from the #SundaySupper team were chosen to receive either Emeril's Potluck or Emeril's Kicked Up Sandwiches Cookbook.  This lucky girl received Emeril's Potluck Cookbook and one of you could win as well. I very much like Emeril but always was a little hesitant to give his cookbooks a try because I - falsely - assumed that I would not be able to adopt the recipe to the dairyfree {Galactosemia} we need to follow.  Boy, was I wrong.  Emeril's Potluck Cookbook is packed - and yes I mean PACKED with amazing recipes perfect for our next potluck, and they are all completely adaptable to the girls diet.  YAY!!!  How exciting is that - I cannot tell you just how happy that makes me.

There are so many fantastic recipes. Black Bean Soup {yes, our girls to eat beans and legumes}, Asian Broccoli Salad, Oven-Poached Salmon with Pink Grapefruit and Tarragon Sauce and so much more...I am bringing two different items to today's Potluck.  Spiced Nuts and Proscuitto Breadsticks.  The girls really wanted to make the breadsticks with me, and Ron really likes nuts.

The recipe for the Spiced Nuts could not be any easier plus they are super delicious.  They get a huge thumbs up from Ron and the rest of the family. To make the recipe dairy free/Galactosemia safe the only change I need to make was swap the butter with Vegan "butter" (I use Earth Balance)


Spiced NutsEmeril's Potluck page 37
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
   4 cups unsalted mixed nuts, such
      as walnuts, pecans, hazelnuts, and almonds
   4 tablespoons unsalted butter
   6 tablespoons brown sugar
   1 teaspoon salt

1. Mix spices and reserve.
2. Heat the nuts in a dry skillet and cook, stirring frequently, until they begin to toast, about 4 minutes.  Add the butter and cook, stirring, unit the nuts begin to darken about 1 minute.  Add the spices, the sugar, 1 tablespoon water and the salt and cook, stirring, until the sauce thickens and the nuts are glazed, about 5 minutes.
3. Remove the nuts from the heat and transfer to a baking sheet lined with aluminum foil, separating them with a fork.  Let the nuts stand until cooled and the sugar has hardened, about 10 minutes.  Store in an airtight container.

...they were super fun to make, delicious, and best of all 100% dairyfree - Galactosemia Safe {just double check the proscuitto that you get}.  They are simply delicious!!!

Holiday #Potluck Party {Swabian Mini Meatballs} & Nikolaus

I am not entirely happy with the title but cannot come up with a better for. Oh well, this will be it then...this post was intended for yesterday {Saturday} but you know we got home fairly late from the party which was way past my the girlies bedtime.

The girlies met Nikolaus actually twice yesterday - once at the Sophie Scholl Schule{German Saturday School}, and the second time at the Christmas Party of Zeitgeist Northwest.  Let me just say, it was a busy day :) - In the morning we drove out to Beaverton for Saturday School, came back home had lunch, and it was time for me to make food for the potluck.

The perfect food for a potluck are - by my book - Mini Meatballs a.k.a. Fleischkuechle.  The recipe is easy to increase and so yesterday, I made it with four pounds of meat to feed the crowd.  I originally posted the recipe for #SundaySupper Tailgate event...here is the recipe.  It is always a hit :)

Swabian Mini Meatballs for #SundaySupper {Schwaebische Mini Fleischkuechle}

Did anyone say party? It is Tailgating Time and the football season is back. "Tailgating Time" is this weeks event by the Sunday Supper Movement.   Okay, so I admit that this German girl has never been Tailgating.  Yes, I have heard it before but was not sure.  Luckily Ron filled me. Plus I also resorted to another trusted source for research - yup, Wikipedia. Wikipedia informs that a "Tailgate Party" is a party that is held around the open tailgate of a vehicle.  These parties are usually held outdoors, or in parking lots. This is a perfect occasion to bring Swabian Mini Meatballs.  Where is Swabia you ask?  Well, it is in Southern Germany and part of Baden-Wurttemberg.  Tuttlingen, the town I grew up in is in Swabia.  So to me this is home cooking - well, okay my version of them....

Swabian Mini Meatballs {Schwaebische Mini Fleischkuechle}

1-3/4 lb. of ground beef {I like to use the leanest}
1/2 lb.    of ground pork
1/2 -3/4 C Matzo Meal {or if lactose is no issue any type of breadcrumb}
2-3 cloves of garlic finely minced, or pressed
1   small  onion finely diced
1   Tbs  dried parsley {or fresh, but use more}
3-4 tsp  paprika
1   Tbs  Kosher salt
             Black Pepper {I grind a lot of it on top}
1           egg

1.  Mix all the ingredients together until well blended.  You may have to increase the amount of Matzo
     Meal/breadcrumbs if the mixture is not firm enough.  Let the "dough" rest for at least 30 minutes,
     then,
2.  roll dough into individual meatballs about 1"
3.  {I use a cast iron pan and do not add oil} heat your pan, and add the first batch of meatballs. Be
     sure to not overcrowd the pan.  When one side is nice and brown, turn - keep repeating the turning
     until meatballs are browned on all sides. Then,
4. remove from pan and set on paper towel.  Repeat until all meatballs are nice and brown.

You can either enjoy them warm, or cold.  I like them without any condiments - yes, me who is usually crazy about condiments - but Ron likes them with mustard.  They are perfect finger food and a hit at any party!


Winning or losing, watching football is always better with a tailgate party. Hosting a big viewing party at home or setting up camp outside the stadium. These recipes are sure to get you in the mood for the big game.
