Monday Night Dinner -

Pasta with Broccoli, Edamame, and Walnuts. Served with Parmesiano Regiano. Nice, Fresh, and green :))) The recipe is from "Simple Suppers" by the Moosewood Restaurant.

It was delicious and guess what Alena's favorite was? - Can you guess it? Yes, right Alena tried to eat every Edamame in the dish :) She is such a bean lover...and what do you think Mia Rosies favorite part was? Now that is a much harder guess, I admit. OK - I will let you know. Walnuts hands down were her absolutely favorite. And yes, both girls also liked the Broccoli :)

Edamame? Interesting.....now I know that edamame is a soy bean, but I was under the impression that Jackson couldn't have the actual edamame although he can have other soy things (which I have NEVER understood!)? Beate, is that something that you have always offered the girls or is this new? I'll have to talk to the Dr. about that one! Every new "yes" food is one less thing Jackson will not be able to experience, and allowing it is a victory in my book!!

We have always offered Edamame to the girls. They actually eat all fruits, veggies, beans, and legumes. The only foods they do not eat are all items containing milk, or other milk derivatives which contain milk sugar.

Levels of both girls have been great, and we made sure that they had these foods prior to a draw.
