This was the first time I tried "smashed potatoes" from a recipe I saw on Twitter from @familyfoodie All I can say is wow, wow, wow - amazing here is the recipe http://familyfoodie.com/how-to-make-the-perfect-smashed-potatoes-sundaysupper/ I followed it to a "T" and used Earth Balance - or use other vegan butter you like - instead of the "cow", and soy milk - rice, or hemp would certainly also work great - instead of the "cow" milk. Voila - perfect smooth, creamy, galactosemia safe (s)mashed potatoes. You must try it...
oh and the meatloaf? It turned out fantastic as well - I just made my usual recipe. Please let me know if you would like me to repost it :)
