Friday Green Bean Stew...

with a loaf of homemade, warm no-knead bread. This is another of these great one pot dishes. Quick and easy to prepare, but it does need time on the stove.

1 lb beef stew - I like it cut in small chunks
1 bag of frozen green beans - I like Haricot Verts
1-2 potatoes optional peeled and chopped
1 onion- chopped
2 garlic cloves chopped
1-2 TBL Herbs de Provence, and other herbs such as tarragon, thyme, etc. to taste
Pepper
Salt
1 cup of white wine - or more
1-1/2 cups of water - may need more

- sautee onion, garlic, and herbs until soft when soft add
- Beef - when slightly browned add
- wine, and after a couple of minutes add water.
- Bring to a slow simmer - cover and simmer for at least 45 minutes
- Add salt, and pepper
- Add beans, and potatoes
- Simmer for at least another 30 minutes
- Adjust spices to taste. (At the end I added a couple of splashes of Balsamico to brighten up the
flavor)

Enjoy with crusty bread!
