More comfort food....Risotto

was for dinner last night. Mushroom Risotto to be exact served along the - almost usual - salad of mixed baby greens. Warm, creamy, Full of flavor spells comfort food. - I am cooking my risotto with a rind of the Parmesiano Regiano, and add grated Parmesiano as well as a slice of Earth Balance at the. I would think that it still turns out creamy and delicious if you make it entirely vegan by leaving the rind and Parmesiano Regiano out. Adding some Earth Balance at the end as the risotto sets seems to be key for a creamy risotto. Oh, and just in case you wonder. I used Crimini mushrooms and sauteed them separately and added them to the Rice at the end of the cooking time.
