Fresh Kale Salad with carrots and sunflower seeds

Can you believe that we did not have mixed greens as a salad tonight?! Yup, it has finally happened another type of salad thanks to our lovely weekly CSA box :)  This week, we got a nice big bunch of Lacinato Kale as well as a bunch of rainbow carrots.  Time for a change of pace, right?  Now, I cannot tell you today what our main meal was {stay tuned for next Sunday to find out} but the fresh Kale salad turned out great!  Yay - after two just about average dinners I may have my mojo back...Oh, and in case you were wondering; both of our girlies loved the salad as well :)

Fresh Kale Salad with carrots and sunflower seeds

- 1 garlic clove - minced
- Juice from 1/2 lemon
- 3 Tbs Toasted Sesame Oil
- Salt & Pepper to taste

- 1 large {or 2 smaller} bunches of Lacinato Kale; cut into small shreds thick stem {middle} part
   removed
- 1/4 C plain sunflower seeds
- 2 carrots grated

1. Mix dressing by mixing minced garlic, lemon juice, and toasted sesame oil in a bowl.  Add salt
    and pepper to taste,
2. In a salad bowl - mix kale, sunflower seeds, and grated carrots,
3. Pour dressing over the greens, toss, and let stand for at least 10-15 minutes before serving
4. Adjust salt and pepper

 Serve as a side, or appetizer with fresh crusty bread!!!
