Taco Tuesday

made everyone happy :) It really did.  Ron was happy because it was beef, both girls were happy because the lazy Susan came out and they got to assemble their food, and I was happy because it is such an easy dinner.  Oh, and yes I did have a meeting to go to tonight so easy as well as ease were on the top of my list :)  A great day to have taco's....

Very boring tacos with ground beef, and taco seasoning.  Yes, you can call this a cheater's cooking...refried beans - no, not homemade , chopped fresh tomatoes and onions - yes, chopped by me,   Tofutti {vegan} sour cream and homemade Guacamole.

Guacamole
2 ripe avocados
2 cloves of garlic, minced, or pressed
juice from one lime
1-2 chopped tomatoes
salt, pepper to taste

1. Cut avocados, and scoop them into a bowl.  Smash them with a fork
2. Add garlic, and lime.  Blend well {I just use a fork}
3. Add tomatoes and blend again
4. Add salt and pepper to taste
